The Cavern – If it’s pub fare you’re after, look no further than The Cavern! Sit back and relax with a pint while listening to the best of 60s and 70s music. This laid-back bar also features 12 flat screen TVs, so its perfect for those hoping to catch the game while on vacation.

Here are our top 10 favourite cocktails here at Morritt’s…recipes included, so you can try making them yourself!

1. Cayman Lemonade

Smooth and refreshing, this drink makes a perfect poolside companion! While there are no actual lemons used in the recipe, the combination of the lime with the sweet and sour mix tastes very similar. Think pink lemonade – with a kick!

Make your own:
2 ounce vodka
1 ounce peach schnapps
1 ounce triple sec
1/2 ounce cranberry juice
1/2 ounce sweet and sour mix
Splash of soda
Squeeze of fresh lime juice
Optional garnish: lime wedge

Mix together, serve over ice and garnish with lime wedge.

2. Margarita

An absolute vacation staple, the margarita is a perfect combination of sweet, salty, sour and bitter. It doesn’t matter if you prefer it blended or on the rocks – either way it’s just as fun to drink! Head over to any of our bars on Tuesdays, when this is the drink of the day!

Make your own:
2 ounces tequila
1 ounce fresh lime juice
1 ounce triple sec or cointreau
coarse salt
ice
limes

Rub the edge of a glass with a lime slice and dip into coarse salt (optional). Fill a cocktail shaker with ice and add tequila, lime juice and triple sec. Shake vigorously. Add ice to the prepared glass. Strain margarita mixture over the ice.

3. Mudslide

The original mudslide was reportedly invented in the 1970s at the Rum Point Wreck Bar. The story goes that a guest at the bar requested a White Russian. The bartender didn’t have any cream – but he did have Baileys. And thus, the mudslide was born. Head over to any of our bars on Wednesdays, when this creamy beverage is the drink of the day!

Make your own:
1 cup ice
1 ½ ounces Baileys Irish Cream
1 ½ ounces vodka
1 ½ ounces Kahlua
Optional garnish: maraschino cherry and some cinnamon on top

Blend ingredients until smooth. Serve in a tall glass and garnish with the cinnamon and cherry.

4. Piña Colada

Everyone knows this one! A fruity blend of rum, coconut cream and pineapple juice is all you need for a taste of paradise. If you like piña coladas (but not getting caught in the rain), head over to one of our swim-up pool bars and order one!   

Make your own:
1 1/2 cup ice
1/2 cup frozen pineapple chunks
2 ounces pineapple juice
2 ounces Coco Lopez coconut cream
1 1/2 ounces white rum
1 ounce dark rum
Optional garnish: Pineapple slices 

Blend ingredients until smooth. Pour into 2 glasses and garnish rims with pineapple slices.

5. Frozen Daiquiri

Apparently Ernest Hemingway fell in love with the daiquiri when he strolled into Havana’s Floridita bar one day…drinking 15 in one sitting! That’s a feat we haven’t seen yet at Morritt’s, but if anyone feels up to the challenge we recommend starting with a classic strawberry daiquiri! 

Make your own:
One 12-ounce bag frozen strawberries
6 ounces light rum
4 ounces lime juice
5 tablespoons sugar
Optional garnish: 6 fresh strawberry slices 

Blend ingredients until smooth. Divide among 6 tall glasses and garnish rim with strawberry slices.

 6. Cayman Mama

Think of this drink as the sister to the Bahama Mama! Keep an eye on how many you have, for this delicious rum punch tends to go down easy. It also pairs nicely with a sunset, so head over to Mimi’s Dock Bar on Thursdays at around happy hour when this delicious cocktail is the drink of the day! 

Make your own:
1 ounce Coconut Rum
1 ounce Dark Rum
Equal orange Juice & pineapple Juice
Dash of Grenadine  

Fill a glass halfway with ice and add all of the ingredients. Stir it up well and enjoy!

7. Rum Runner

If you’re looking for something strong, this is your drink! Named for the bootleggers who smuggled in liquor during Prohibition, the rum runner is a favourite with those who like their drinks with a kick. Head over to any of our bars on Fridays, when this delicious cocktail is the drink of the day! 

Make your own:
1 ounce fresh lime juice
1 ounce orange juice
1 ounce unsweetened pineapple juice
1 ounce banana liqueur
1 ounce light rum
1 ounce dark rum
½ ounce Chambord
½  ounce Grenadine
Optional garnish: orange slice  

Pour ingredients into an ice-filled cocktail shaker, and shake vigorously. Strain into an ice-filled glass and garnish rim with orange slice.

8.Watermelon Mojito

This drink takes everything you love about a mojito and turns it up a notch. Made with fresh watermelon and mint, nothing says summer like one of these! You won’t regret trying this fun twist on an old classic.  

Make your own:
8 watermelon chunks, seeds removed
Juice of 4 limes
8 teaspoons sugar
4 handfuls mint leaves, plus more for garnish
8 ounces white rum
Ice
Optional garnish: watermelon slice 

For each drink, muddle 2 watermelon chunks with the juice of 1 lime and 2 teaspoons sugar in a glass. Stir in a handful of mint leaves, then add 2 ounces white rum and ice to each glass. Garnish with more mint and watermelon slice.

9. Blue Iguana

This drink is named after an endangered lizard on Grand Cayman. When a blue iguana reaches maturity, their skin colour ranges from grey/green to a pale or turquoise blue! Raise your glass to this beautiful animal with one of these vibrant drinks.   

Make your own:
1 ounce light rum
1 ounce coconut rum
1 ounce tequila
1 ounce vodka or lemon vodka
1 ounce banana liqueur
1 ounce blue curacao
6 ounces pineapple juice 

Combine all of the above ingredients then pour over ice. Garnish glass with fresh piece of pineapple. Makes 2.

10. Caybrew

Okay, this last one isn’t a cocktail. But nothing beats a refreshing cold Caybrew on a hot day! This homegrown beer is brewed at the Cayman Islands Brewery and has won plenty of international awards. Drink like a local and order one at any of our bars!

Three ‘Must-Have’ Caymanian Dishes

Delicious foods to try on your next visit!

There are certain flavours that come with Caymanian cuisine and Morritt’s adds its own special flare at our on-site restaurants.

Here are a few dishes we offer on our menus, as well as a recipe to try at home so you can feel that Caymankind spirit when you’re away from our shores. And if you are just browsing our site and have never experienced these foods, well you are in for a treat!

Breadfruit
Similar in texture and flavour to a potato, breadfruit is a popular side dish in Caymanian cuisine. It can be prepared much in the same way as a potato, with roasting in the oven being one of the most popular. Here at Morritt’s we turn it into fries and serve it with a light sprinkling of salt.

Cayman-style Beef
Beef has a special place in Caymanian culinary history. Several decades ago, before Cayman became the thriving tourism and financial centre it is today, beef was hard to come by and therefore expensive. This meant that it was typically only enjoyed as a special treat at Christmas time (also known as ‘Christmas beef’).

Cayman-style beef is stewed low and slow to yield tender, juicy, melt-in-your-mouth shredded beef that is flavoured with onion, garlic and peppers (scotch bonnet, or seasoning peppers if you can’t take the heat!). Served up with a side of rice and beans, roasted breadfruit and fried plantain and you have yourself a perfect hearty meal!

Cassava Cake
Cassava is a starchy root that can be enjoyed in savoury applications, such as roasting, or in sweet dishes such as cassava cake. Like Cayman-style beef, many Caymanian families have their own recipe and secret tweaks for cassava cake – so much so, that it’s not unusual to see cassava cake competitions at local food festivals! Cassava cake is dense, sticky and deliciously sweet. Grating the cassava for this dish is labour intensive, but man is it worth it!

 

Cassava Cake Recipe

Ingredients

  • 4 lbs Cassava, grated
  • 2 lbs Dark brown sugar
  • 2 cans Coconut milk (plus additional 3-4 cups of water)
  • 2 tablespoons Vanilla essence
  • 1 tablespoon Salt
  • 1⁄2 teaspoon Nutmeg, grated
  • 1 teaspoon All Spice
  • 1 teaspoon Cinnamon

Directions

  1. Bring coconut milk to a boil. Add sugar, stirring until completely dissolved and continue to boil for about 45 minutes. Reserve 1/2 cup of the coconut milk/sugar mixture for later.
  2. Combine remaining ingredients in a large mixing bowl, stir until well blended. Add hot coconut milk mixture and stir well. Mixture should be of a thick liquid texture.
  3. Use 2 tablespoons of coconut milk mixture to grease 9” baking pan. Pour batter into prepared baking pan and bake at 350ºF (basting occasionally with reserved coconut milk mixture) for 2 1/2 to 3 hours or until knife inserted in centre comes out clean. Spread any remaining coconut milk mixture over top of cake. Place cake on top of stove to cool completely.
